I’ve been making these spicy chicken tortilla roll ups for years! They are a crowd pleaser! The best part is that you can combine everything in one bowl, roll this mixture in a tortilla, chill and serve. I make these for block parties, tailgates, and just to eat as a snack because my whole family loves them. Also the perfect Super Bowl finger food! Not only do they taste good, they present well with all the different colors! And if you’re a Chiefs fan, these also look red/gold! Here’s how to make spicy chicken tortilla roll ups.
I love this recipe because you can modify it to the level of spice you like by using spicier versions of the ingredients. You could also add Tabasco or fresh jalepneos if you wanted it spicier. You can also modify which type of tortilla you wish to use. There are sundried tomato wraps, regular tortillas, jalapeño cheddar, spinach, etc. There is no right way here! Just a bunch of delicious ingredients combined to make a no-cook appetizer!
How To Make Spicy Chicken Tortilla Roll Ups
Ingredients
- Shredded chicken I keep things easy and use an entire rotisserie chicken
- 1 can Rotel I used mild but could definitely use hot to make it spicier
- 12 oz. softened cream cheese
- 1 cup shredded cheese of choice I used a Mexican blend
- 1 clove garlic diced
- 3 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper I used paprika to make it less spicy
- 1/2 teaspoon garlic salt
- 1/4 cup chopped cilantro
- chopped green onion I used about 6
- 6-8 large size tortillas I used jalapeño cheddar flavored
Instructions
- In a large mixing bowl, combine all ingredients and mix together well.
- Lay out tortillas and divide mixture evenly in the center of each. Spread into a thin layer leaving the edges clean. Roll each tortilla tightly. At this point, I individually wrapped each tortilla in precut foil wrap and chilled them for about an hour.
- Cut tortillas into slices and transfer to a serving platter!
Based on the ingredient list alone, you can see how much flavor these spicy chicken tortilla roll ups have! I’m usually able to make about 6 tortilla roll ups, which ends up making a lot of cut pieces. I love that this is no bake and you can make them ahead of time!
