Combine cereals, pretzels, peanuts, and M&Ms in a large bowl.
In a separate bowl, melt the white chocolate and coconut oil in the microwave. Start with 30 seconds, stir. Keep going another 30 seconds and stir. Do this until melted.
Pour melted chocolate over the dry ingredients and stir carefully until all pieces are coated.
Cover a large baking sheet with parchment paper. Tip: roll up paper into a ball and then lay out flat on the baking sheet. This helps keep it flat! Pour mixture on to the baking sheet and spread out until mostly flat.
Let set up at room temperature or put in the fridge for about 15-20 minutes to harden up.
Once ready to serve, remove from fridge and break up into chunks/pieces. Add sprinkles or more M&Ms to provide a pop of color. I served mine in a bowl.
