How to Make the Easiest Tater Tot and Egg Breakfast Casserole

I made this breakfast casserole and shared it on Instagram and I totally forgot about it until I was scrolling through some old posts! Let’s make sure we don’t forget it again as it’s a crowd pleaser! Egg casseroles are so great for large families or for entertaining because it makes a good amount of food. For smaller families, this makes for great leftovers. Here is how to make the easiest tater tot and egg breakfast casserole.

How to Make the Easiest Tater Tot and Egg Breakfast Casserole

Here's how to make tater tot and egg breakfast casserole. Perfect for feeding a crowd or for a great brunch of breakfast for dinner meal!

Ingredients

  • 1/2-1 roll sausage I used hot sausage
  • diced onion + any veggies you like I just used onions here
  • large bag of frozen tater tots I used a 28 oz bag
  • 2 cups cheese of choice I used colby jack
  • 8 eggs
  • 2 cups milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt/pepper to taste

Instructions

  • Spray a 9×13 pan with cooking spray. Preheat oven to 375°.
  • Brown and drain 1/2 – 1 roll of HOT sausage and some finely chopped onion. *The hot is adds flavor but not a ton of heat.* Add whatever veggies you like here, this is customizable.
  • In a separate bowl, combine 1 large bag of frozen tater tots, 2 cups of cheese of choice, and sausage/onions.
  • Add tater tot mix to your pan.
  • Whisk together 8 eggs, 2 cups milk, 1/4 tsp garlic powder, 1/4 teaspoon onion powder, and salt/pepper.
  • Pour egg mixture evenly over tater tot mixture.
  • Bake uncovered at 375° for about 40 min or until eggs are cooked through and it’s bubbling!

I can see this being good with a little hot sauce if that’s your thing. As you can see, it’s an easy meal to prepare. I don’t know about prepping it the night before as I’ve always made right before I’m cooking it. The frozen tater tots get cooked through with no problem. I served this to my family with mixed berries. We had enough leftovers to eat the next day. Here is a link to some 9×13 baking dishes if you are in the market. I use mine all the time!
