I have been wanting to share this recipe forever and finally getting to it! This lasagna recipe is from my mom, it’s the only one I’ve ever made. It feeds a lot and is always a crowdpleaser. There is a little twist that makes it different from most lasagna recipes. I’ve also recently become a volunteer for Lasagna Love, an organization that has home cooks deliver homemade lasagna to people who request the need for one. I just delivered my first one! This is the perfect time to share how to make this easy three-cheese lasagna.
Three-Cheese Lasagna
Ingredients:
- 1 lb. meat (sausage, ground beef, ground turkey, whatever you like)
- 1/3 cup chopped onion
- 1 (24 oz.) jar marinara
- 1 egg
- 16 oz. cottage cheese
- 8 oz. shredded parmesan cheese
- 8 oz. shredded mozzarella cheese
- 9 lasagna noodles
- salt/pepper
Instructions:
- Preheat over to 425 degrees.
- Brown meat and onion over medium heat in a large saucepan. Drain grease if there is an excessive amount. If there is not a lot of grease, I leave as-is for flavor.
- While meat is browning, boil and cook lasagna noodles according to package. Make sure you salt your water!
- After meat and onion is done, add entire jar of marinara to the pan. I like to add a little water to the jar at the end and swirl to get the rest of the sauce, but not necessary.
- Open container of cottage cheese and crack and egg right into it. Stir up egg and cottage cheese mixture.
- Once meat sauce, noodles, and cottage cheese mixture is ready, it’s time to assemble the lasagna in three layers. Spray bottom of a 9×13 pan (I used aluminum pan because I was delivering to someone, but I would use a glass baking dish if making home).
- Layer three noodles on the bottom. Next, add 1/3 of the meat sauce on top. Add 1/3 layer of cottage cheese mixture on top of sauce. Finish by adding 1/3 parmesan cheese and 1/3 mozzarella cheese. Repeat this process two more times until your ingredients are gone.
- Sprinkle salt and pepper on top.
- Cover with foil and bake at 425 degrees for 20 minutes. Remove foil and bake for another 10 minutes or until cheese is golden and sauce is a little bubbly. Let stand for about five minutes before cutting.
I prefer this cottage cheese mixture to ricotta cheese, which is why this recipe tastes a little different than traditional lasagna recipes. Better in my opinion!
A three-cheese lasagna is a perfect recipe to feed a large group. You can prep these ahead of time and bake when ready, just make sure it comes to room temperature before baking. It’s easy to customize with your favorite meat/marinara sauce. This recipe is cheesy and hearty and easy to assemble.
