If you are local to the Kansas City area, you might be familiar with a restaurant called Longboards. They serve warm and cold wraps and bowls. Kate, my daughter, is obsessed with the Cabo Steak Wrap. We decided to try to recreate this at home for a fraction of the price and they turned out almost identical in taste and flavor! Here’s how to make a copycat Cabo Steak Wrap from Longboards.

Ingredients:
This is more of an ingredient assembly than it is an actual recipe. So use as much or as little ingredients as you like!
- Spinach burrito tortillas
- Steak
- Chipotle Ranch
- Pico de gallo
- Pepper jack cheese
- Rice
- Guacamole

Assembling Your Steak Wrap
Start by grilling or pan searing your steak of choice. I season mine with sea salt and pepper and cook in some extra virgin olive oil.

Once your steak is cooked, the rest is just assembling. We used pre-packed sticky rice from Costco for our wraps. You can make two wraps with one of these containers. For convenience, we also used store bought pico de gallo, chipotle ranch, and guacamole cups. All of this makes it super easy to assemble!

Next, add pepper jack cheese, chipotle ranch, and steak. We weren’t sure which chipotle ranch to buy so we took a chance on this one and it was really, really good!

Cook your rice and add to the wrap. My daughter added some additional ranch as well.

You are now ready to tuck and fold your wrap. Make sure you don’t pack it too full that you can’t close it up!

At this point, we used a George Foreman grill to press down the wrap and heat it through, almost like a panini. I forgot to take photos of this part! You could certainly put it in a hot pan with a little avocado oil spray to brown it up on both sides and heat it through if you don’t have a press.

Slice it up and enjoy! This is super filling and tastes exactly like Longboards! If you have never had Longboards, try this anyway, you won’t regret it. They also serve the same wrap with chicken instead of steak. You could obviously swap out ingredients to your liking. It’s the rice and the chipotle ranch that takes it up a notch from an ordinary wrap! XO
