How to Make Homemade Buffalo Chicken Bowls

I feel like we are in a phase of life where everything thrown into a bowl looks pretty and tastes delicious! Pretty sure we have Chipotle to thank for that, am I right? We have two teenagers who love all things with buffalo sauce, so I’m always trying to find ways to incorporate buffalo chicken into our dinner plans. I used a few spices and buffalo sauce to make the chicken flavorful, roasted some veggies and potatoes, and threw it all into a bowl. Don’t forget the cheese and ranch though! While this is not a new concept, here’s how to make homemade buffalo chicken bowls.

Buffalo Chicken Bowls

  1. Preheat oven to 425 degrees.
  2. Prepare potatoes: Wash, cut into small pieces. I started with small potatoes and just cut them in half. Toss them with extra virgin olive oil, salt, and pepper. Spread on a baking sheet. Bake at 425 degrees for 25-30 minutes or until you can stick a fork through them easily and are crispy.
  3. Prepare broccoli (or whatever veggies you choose): Wash, cut into stems. Toss with extra virgin olive oil, salt, pepper, and garlic salt (the garlic salt makes the broccoli). Spread on a baking sheet. Bake at 425 degrees for about 15 minutes or until crispy.
  4. Prepare buffalo chicken: Cut cooked chicken and toss with salt, pepper, paprika, garlic powder, and hot sauce. Throw in a pan to heat through. Keep this on low heat until you prepare your bowls.
  5. After everything is cooked, start assembling this bowls. Add potatoes, broccoli, and chicken. Top with cheese and ranch. You can always use sour cream too. Or more hot sauce. Any sauce that helps the bowl from feeling dry.

Why We Love this Meal

This meal is great because you need one oven temperature. Throw the potatoes in first, and 15 minutes later add the broccoli to the oven so everything comes out at the same time. You could melt your cheese by throwing everything in a pan and putting under a broiler. Adding cold ranch kind of makes this a half hot/half cold dish. The flavors come together so well.

You’re going to want to make extra because the leftovers are just as good! I just reheated in the microwave the next day. Using a rotisserie chicken makes my life easy, but you could always bake chicken breasts or cook in a crock pot and shred. I also buy bagged small potatoes to keep things simple. You can customize this to your liking as it’s just a meat and potatoes meal thrown into a bowl! Ha! Add whatever you like!
