I think everyone can agree that Chipotle is a delicious, healthy-ish, quick option for eating out! But sometimes we crave the taste at home too! It’s easy to recreate the flavor by making homemade chipotle chicken bowls.
I use a few shortcuts that helps me put this dinner on the table in no time. It’s one meal that all four of us love, so I know there will not be any complaints. The great part about chipotle bowls is the ability to customize the toppings to your liking. Here’s how to make homemade chipotle chicken bowls.

Toppings for Homemade Chipotle Bowls
You can obviously offer whichever toppings/sides your family loves! For our family, we use cilantro rice, salsa (from Costco), cilantro, pinto beans, avocado, cheese (this Queso quesadilla cheese from Walmart is delicious), and sour cream. I’ll also show you how I prepare the corn mixture to put on top, which is the best part in my opinion!
For the actual recipe part of the these bowls, the seasoning of the chicken is important! I’ll share the recipe I’ve been using (adapted from this website) as well as the quick, no-measure corn concoction!
Chipotle Chicken Bowls
The original recipe uses chicken breasts marinated in a chipotle sauce and then cooked and cubed/shredded. I have made it this way before and it’s so good! However, I’m all about saving time, and I’ve recently been using a cut up rotisserie chicken in the same sauce, and it works just as well. No marinating time, so I can just cut the chicken, throw the sauce together, and get started on eating dinner!
Ingredients:
- 1 rotisserie chicken (cut)
- 4 finely chopped garlic cloves
- 1/2 cup chopped onion
- 1/4 cup distilled vinegar
- 2 Tablespoons chili powder (you can use ancho chili powder if you want it spicy)
- 2 teaspoons cumin
- 1 teaspoon dried oregano
- 4 Tablespoons oil (I use EVOO)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 chipotle in adobo, cut (these adobos come in a small can and you just want to cut up one as they are spicy)
- 2 Tablespoons of the chipotle in adobos sauce (sauce only)
Instructions:
- Cut up rotisserie chicken and place in a large mixing bowl.
- Add the rest of the ingredients in any order. Stir up to coat all of the chicken.
- Start assembling your bowls!
Homemade Corn Salsa
Once the chicken is prepared, I make a corn mixture to top the homemade chipotle chicken bowls. I simply add a can of white shoepeg corn to a small dish. I squeeze in half a lime, sprinkle some salt and pepper, add about a 1/4 cup chopped red onion, and a handful of cilantro. Mix and you’re ready! You can also add chopped jalapeño to this if you want your bowls to be spicy!
Shortcuts for Chipotle Chicken Bowls:
- I use 90 second rice to make our chipotle bowls. We usually need 3-4 packets for our family of 4. We like Uncle Ben’s Cilantro Rice
- Rotisserie chicken makes this meal super easy! It saves the day for most dinners around here!
I like to throw a few beans in my bowl, so I simmer some pinto beans on the stove. You can certainly throw this in the microwave too!
