I feel like meatloaf gets a bad rap in the food world! Add bacon and make it cheesy and it changes the game! I actually used to make this bacon cheeseburger meatloaf all the time many years ago when we were first married and living in Charlotte, NC. Our neighbors and friends introduced us to it. When going through some old recipes in my recipe box recently, I came across this and made for my family. It’s one of those recipe cards that is stained and faded…the best kind! Meatloaf is hard to photograph because it’s just not that pretty. But this bacon cheeseburger meatloaf actually tastes just a like a burger! I served it with a side of dill pickle pre-packaged salad mix from Costco. Perfect with the burger taste! For the kids, I added a side of fries too. Burger night at home!
This bacon cheeseburger meatloaf calls for ingredients you likely already have on hand, so it is easy to keep in the rotation. For the bacon, I used pre-cooked microwavable bacon from Costco. We keep a large pack in the fridge at all times. It’s the perfect shortcut! The original recipe calls for french fried onions at the end, but I substituted diced onion instead.
How to Make Bacon Cheeseburger Meatloaf
Ingredients
- approximately 1.0 – 1.25 lb. ground beef
- 8-10 slices cooked and crumbled bacon
- 2 eggs slightly beaten
- 1/3 cup bread crumbs
- 1.5 cups shredded cheese of choice
- 1/4 cup mayo
- 1 tablespoon Worcestshire sauce
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup ketchup
- 2 tablespoons mustard
- 1 can French fried onions or 1/4 cup diced onions
Instructions
- Preheat oven to 350 degrees.
- Combine beef, bacon, eggs, bread crumbs, cheese, mayo, Worcestershire sauce, salt, and pepper. Add diced onions if using. If using French fried onions, those get added later (see below).
- In a separate bowl, combine ketchup and mustard and mix together. Add 1/4 cup of this mix to the meat mixture. Reserve the rest for the top of the meatloaf.
- Press meat into a loaf pan, or shape into a loaf and place in a baking dish.
- Spread remaining ketchup/mustard mix on top of loaf. Bake for 50-55 minutes. If using French fried onions, bake for 40 minutes, top with FFO, and bake an additional 10-15 minutes.
I love meals that can be prepped ahead and thrown in the oven so I have time to clean up the kitchen while it cooks. The meat should no longer be pink and should be bubbling a little when you pull it out.
