What’s better than a cold, crisp salad on a hot summer day?! Salads are so versatile and easy to switch up with toppings and dressings! This grilled chicken summer salad with garlic lime vinaigrette is colorful and delicious! We planted a small garden this year and have been getting so much tasty lettuce from it! It’s even more fun to make a salad with greens you planted and took care of!
Normally, I would cut corners with a rotisserie chicken, but I love the taste and look of grilled chicken for a salad. I did cut corners with pre-cooked bacon and store bought hard-boiled eggs. The rest is just wash and toss! The additional of the fruit makes this salad colorful and summery.
I decided to make a homemade vinegarette. It’s citrusy and tastes light and fresh. This would be a perfect salad to take to a large gathering or to have when you are hosting. You can easily assemble the salad and take the dressing on the side!
I served this salad for dinner with a side of sourdough. This salad is healthy, delicious, and looks “fancy” without it actually being hard to pull together. The dressing only takes two minutes to make!
Grilled Chicken Salad
- Mix of spinach & romaine lettuce
- Hard boiled eggs
- Bacon bits
- Almond slices or any nut of choice
- Blue Cheese Crumblies
- Raspberries & Blackberries
- Avocado chunks
Garlic Lime Vinaigrette
- 1/3 Cup Olive Oil
- 1/4 Cup fresh lime juice + the zest of one lime
- 1 clove minced garlic
- 2 Tablespoons heavy cream
- 2 Tablespoons honey
- 1/2 Teaspoon salt + 1/4 teaspoon pepper
