This is a recipe so easy it’s adapted from a kid’s cookbook! My daughter checked out a few child-friendly cookbooks at the library and she opened it up on our way home and asked if she could help me make dinner. She decided she wanted to make an easy homemade fried rice recipe! We decided to add chicken as our protein, but obviously you could tweak this to your liking! Once you have cooked the rice, this fried rice recipe comes together in no time.
Homemade Fried Rice
Ingredients:
- 6 servings long grain rice
- 3 Tablespoons EVOO
- 1/2 cup frozen corn
- 1/2 cup frozen peas & carrots mix
- 4 eggs (beaten)
- 4 Tablespoons soy sauce (more depending on how much of this flavor you like)
- Green onion (we used about two stalks)
- Rotisserie chicken (or protein of choice)
Instructions:
- Prepare rice according to package instructions (we prepared 6 servings worth).
- Heat oil in skillet and add cooked rice, peas & carrots, and corn and cook for several minutes on med-high heat.
- Push the rice to one side of the pan and add eggs. Scramble the eggs up and stir it into the rice.
- Add soy sauce, green onion, and your protein.
- Serve and enjoy! So easy!
Homemade fried rice is such a great dish because your grains, veggies, and protein are all in one bowl! This is also a one pan meal which means less dishes at the end. Our whole family woofed it down and I even have some leftover for lunch tomorrow!
The cookbook we adapted the recipe from is called Cooking Step by Step (more than 50 recipes for young cooks). There are several recipes in the book that are perfect for beginner cooks or kids that love to help in the kitchen. My daughter is loving being in the kitchen with me right now and I couldn’t be happier about it!
The recipes called for bean sprouts, which our grocery store didn’t have. I would add them in if you can find them! It also says to cook the fried rice in a wok.
