Good morning, friends! I whipped up some easy pancakes this morning and thought I would put the recipe on the blog for quick reference. I first learned about this recipe from Cella Jane blog (she’s a local KC gal). She makes them for her littles. I find them to be excellent for me and my older kids. It’s a bonus is that they can prepare the mix themselves! Another bonus is that you most likely have the ingredients on hand at all times!
Three Ingredient Pancakes
- 1 egg
- 1 banana
- 3/4 cup oats
- I add dark chocolate morsels to mine but not necessary
Simply mash, mix, and cook on the stovetop!
This makes 4 smaller pancakes or 3 good size pancakes. Enough for one serving. I would make two batches for me and the kids together. In full disclosure, the pancakes are a little hard to flip because of the texture. In the end, mine end up looking less like pancakes and more like oatmeal! Just flip when one see starts to get a little golden brown. I think higher heat works best to solidify the mix.
These three ingredient pancakes are tasty and easy and healthy! I added a little drizzle of real maple syrup, but a smear of peanut butter would be delicious too!
I love a little something sweet in the mornings. And my kids aren’t huge egg eaters, so this is fun to put in the breakfast mix! And let’s just take a moment with these gorgeous peonies. I can’t even!
