This is a 100% a comfort food recipe! My mom used to make chicken and noodles over mashed potatoes when I was a kid and I’ve always loved it. She still makes it for herself and my dad. Both of my kids had ortho appointments recently. One got their braces tightened and one got their braces on. Cue the comfort food that’s easy to chew! Her’s how to make chicken and noodles over mashed potatoes.
This recipe comes together with simple ingredients. I always cheat and use store bought mashed potatoes. They come in handy for so many recipes and they are actually really delicious! We prefer Bob Evans brand. Another short cut? Grab a rotisserie chicken! Saving time in the kitchen while still putting a meal on the table is a win/win! Also, pre-cut shredded carrots are a time-saver! And Reames frozen noodles are the absolute best!
All good recipes start with onion and garlic and carrots and celery. This recipe is meant to be thicker, to put on top of mashed potatoes. It’s less of a soup, so it doesn’t have a ton of broth in the end when it all cooks down.
Chicken and Noodles over Mashed Potatoes
Ingredients:
- 8 cups chicken broth
- 3/4 – 1 cup carrots (I use pre-shredded for ease)
- 1/2 cup celery (you can use more of this if you love it)
- 4 cloves garlic (chopped)
- 2 bay leaves
- 1/2 cup onion
- 1 package Reames noodles
- rotisserie chicken
- salt/pepper to taste
- mashed potatoes (I use store bought)
Instructions:
- Add chicken broth to your pot. Turn stove to medium/high heat.
- Chop and add veggies (onion, garlic, carrots, celery) and bay leaves to broth. Simmer for about 15 minutes, or until veggies are softened.
- Turn up the heat to a boil. Add noodles. Cook according to package instructions, around 20 minutes.
- When noodles are done, add pieces of rotisserie chicken and salt and pepper to taste and simmer until heated through.
- Serve over mashed potatoes!
Simple, right?! This always makes enough for leftovers for lunch the next day! The ultimate comfort food for this time of year!
