I got this chicken pot pie recipe from my mom who has been making it for so long. And now I feel like I have been making it for my family for so long! Sharing recipes from my family makes my heart happy. This recipe could be considered semi-homemade because I buy pre-made pie crust. But that’s also why I like this recipe! It’s homemade without the fuss of a lot of time. Also, it really is a one and done meal because the meat and veggies are packed into the crust. Here’s how to make an easy chicken pot pie.
The ingredients for this chicken pot pie recipe are simple and I usually have everything on hand except the rotisserie chicken. You could obviously roast or boil or bake your chicken and shred it for the recipe, I just prefer to save time and use a rotisserie chicken.
You can also add whatever veggies you like to your pot pie. My kids don’t love green beans, so I just use carrots, peas, and corn. There is also onion in the recipe for added flavor.
Easy Chicken Pot Pie
Ingredients:
- 1 package refrigerated pie crust
- 1/3 cup butter
- 1/3 cup onion
- 1/3 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14.5 oz) can chicken broth
- 2/3 cup milk
- 2 cups chicken
- 2 cups frozen mixed vegetables
Instructions:
- Preheat over to 425 degrees.
- Press first pie crust into the bottom of the pie plate. Set aside.
- Melt butter on the stove in a medium pan. Add onion and cook until tender.
- Add flour and salt/pepper and cook for 2 minutes, stirring non stop.
- Gradually stir in broth and milk to combine. Cook until thick and bubbly while stirring.
- Add chicken and veggies and remove from heat.
- Pour mixture into pie crust. Top with the second crust. Fold edges and slit the top in several places with a knife so air can be released.
- Bake at 425 degrees for about 30 minutes or until crust is golden brown.
This is a recipe for all ages. It’s super easy to pull together and it looks pretty when it comes out of the oven! We always have leftovers even after the four of us have eaten.
