My best friend introduced me to this salad twelve years ago when we first met. She always served it with chips, so we eat it more like an appetizer than a salad. But, it’s delicious any way you eat/serve it! This salad is especially easy to make if you grow your own cucumbers and tomatoes. I know many people have an abundance of both of these in the summer, so be sure to keep this salad on your radar and in your rotation. Confession: I don’t even love cucumbers or tomatoes, but something about them combined in this salad with the dressing is addicting! Here is how to make cucumber, avocado, tomato and corn salad.
Ingredients
You can tweak the ingredients to your liking, based on the veggies you like, but the original calls for cucumbers, avocados, tomatoes, and corn. I never add red onion because we have a friend with an allergy, but you can also add chopped red onion. This past summer I bought grape tomatoes and quartered them, but you can use any kind you like or grow. You can use frozen, off the cob, from a can, or whatever kind of corn you like. Aside from the veggies, all you need is one ranch packet and some red wine vinegar.
How to Make Cucumber, Avocado, Tomato and Corn Salad
Ingredients
- 2 cucumbers chopped
- 2-3 avocados chopped
- tomatoes I used an entire container of salad tomatoes (quartered)
- red onion optional
- 1 cup corn frozen, can, off the cob, etc
- 1 ranch packet
- 3 tablespoons red wine vinegar
Instructions
- Chop cucumbers, avocados, tomatoes, and onion and add to a large bowl. Drain corn if using from a can and add to the bowl. 2. Mix together carefully. Shake ranch packet on top of the veggies. 3. Add red wine vinegar and mix everything together. Chill one hour before serving. We like to serve with Scoops chips to add a little crunch!
Tips for Cucumber, Avocado, Tomato and Corn Salad
Be sure to chill this before serving!
We like to serve with Scoops for some added crunch, but you could certainly just serve as a side salad.
If bringing to an outside function, place the bowl of salad inside another bowl that is filled with ice to keep it cold. Promise it won’t last long though!
There is no real star of the show here. All of the ingredients and flavors just mix so well together! As I mentioned earlier, I don’t even like cucumbers and tomatoes on their own. However, having them combined with this dressing, I can’t stop eating it!
