How to Make White Chocolate Dipped Cranberry Oatmeal Cookies

I make these white chocolate dipped cranberry oatmeal cookies every year at Christmastime. The cranberries and white chocolate drizzle feel so festive to me! I discovered these cookies at a cookie exchange when we lived in South Carolina many years ago and love them. So I acquired the recipe and have been making ever since! Every year I make some for our neighbors and friends and ourselves. These are so delicious and different than your traditional Christmas cookie. And bonus – one batch makes over 3 dozen cookies!

White Chocolate Dipped Cranberry Oatmeal Cookies

Ingredients:

Instructions:

1. Beat softened butter at medium speed with an electric mixer until creamy. 

2. Gradually add sugars and beat well.  Add egg and vanilla, beating until blended. 

3. Combine flour and next 3 ingredients in a separate bowl, and gradually add to butter mixture, beating until blended.

4. Stir in cranberries, toasted pecans, and oats.

5. Drop Tablespoon sized dough balls on greased baking sheet.  Bake at 375 degrees for 8-10 minutes.  Cool completely. 

6. Microwave white chocolate and shortening in a bowl until melted. Dip half of each cookie into the melted chocolate. Place dipped cookie on wax paper until firm. I always use the extra chocolate to make a drizzle over the cookies as well.
