How to Make One Pot Chicken and Wild Rice Soup

Fall is quickly approaching and I have an easy chicken and wild rice soup recipe to share with you that I have been making for many years. You can make this soup with very few ingredients, many of which you probably already have on hand. My family requests this soup all the time (even in the summer)! Here’s how to make one pot chicken and wild rice soup.

The full recipe is below, but I always omit the celery because my family doesn’t like it. I also add the optional mushrooms but chop them into very small pieces so my kids don’t even know they are eating them! The mushrooms add so much flavor! Always salt and pepper before serving too. It just gives it that little something extra!

Chicken and Wild Rice Soup

Instructions:

  1. Saute onions in butter until soft. And flour and cook for several minutes.
  2. Using a whisk, slowly add broth and half & half and stir. Cook over medium heat.
  3. Add wild rice, chicken, carrots, celery, mushrooms and simmer until veggies are cooked through and soup is hot and bubbling.

As you can see this is such an easy one pot recipe with very few ingredients! Doesn’t everyone love comfort food? I even use some shortcuts mentioned in the recipe. This feeds our family of four and we always have plenty of leftovers! Serve with crusty baguette! Enjoy! XO
